Eldric Stuart and his team at Harken have created a coffee bar and roasters serving crafted coffee and Japanese inspired vegan food. A respect for the choreography of the crafted ceremony was inspired by a Japanese approach to ritual. The atmosphere or the way the space feels becomes integral to the tasting experience. Working with existing battered clay brick walls from the old fishmongers building new dark paint finishes and elegant and simple ceramic plates and cups balance with the light and warm hemlock millwork to create a welcoming atmosphere that feels cloistered from the street.

  • A coffee bar has been located in the centre of the space to facilitate conversations between patrons and the barista as the coffee is prepared and bar chairs surround the bar so that their is always a convivial atmosphere in the space.

    Once within the space, a series of wood windows allow views into the roastery so that patrons can see the connection between the roasting process and brewing of their own individual coffee.
